Roasted Chickpeas

Chips are essential for a movie night. The only problem is, once you start, it's hard to stop! Plus, chips and similar snacks are empty calories. Our solution: Roasted Chickpeas. They'll supply you with plenty of plant-based protein and valuable fiber. So, go ahead, enjoy your movie night without feeling guilty about what you're snacking on!


Ingredients for 2 servings

• Olive Oil (2 tsp., 14 mL)
• Lime Juice (1 tsp., 5 mL)
• Cumin (to taste)
• Garlic Powder (to taste)
• Spicy Paprika/Chilli Powder (to taste)
• Salt (to taste)
• Cooked/Canned Chickpeas (265 g)

Instructions for 2 servings

1 Preheat the oven to 175°C / 350°F.
2 Drain the chickpeas in a sieve and rinse with water if using canned chickpeas.
3 Pressure cook chickpeas al dente.
4 Dab dry with a paper towel and then place in a bowl.
5 Add the olive oil, lime juice and remaining seasonings to the bowl and mix well. Spread the chickpeas out over a baking sheet covered with baking paper.
6 Roast the chickpeas on the middle rack for approx. 40 minutes.
7 Enjoy!
