Cauliflower Rice with Carrots & Peas

If you'd prefer a lighter meal in the evening, or are looking to avoid some calories to reach your daily goal, Cauliflower Rice with Carrots & Peas is exactly what you need. The cauliflower serves as a low-carb replacement for rice. Tip: It also makes a delicious side for chicken or fried tofu.
Ingredients
• ½ Onion (80 g)
• 1 Garlic Clove (3 g)
• Olive Oil (1 tsp., 7 mL)
• Frozen Peas & Carrots (175 g)
• Soy Sauce (1½ tbsp., 22 mL)
• Salt and Pepper (to taste)
• ½ Head of Cauliflower (500 g)

Instructions
Use a food processor to finely grate the cauliflower or use a grater.
Chop the onion and garlic into small pieces and sauté with olive oil in a hot pan until translucent.
Add peas and carrots to the pan and cook for approx. 15 minutes.
Stir in the cauliflower and continue cooking for an additional 7 minutes.
Finally, season with some soy sauce, salt and pepper.
