Aubergine, also known as eggplant, is a versatile vegetable that can be used in many different recipes. One of the most popular ways to enjoy aubergine is by roasting it to perfection and seasoning it with delicious Mediterranean flavors. Ingredients:
2 large aubergines
2 cloves of garlic, minced
2 tbsp of olive oil
1 tbsp Dry Red Chilli flakes
1 tbsp of balsamic vinegar
1 tbsp of honey
1 tsp of dried oregano
Salt and pepper to taste
Grated Cheese
Tahini Dressing
70 g tahini
Juice of 1 lemon
3-4 clove crushed garlic
1 tbsp of water
Salt
Instructions:
Wash and slice the aubergines sliced into 1/2 cm rounds.
Preheat a grill or grill pan over medium-high heat.
In a small bowl, mix together the garlic, olive oil, balsamic vinegar, honey, red dry chilli flakes, oregano, salt, and pepper.
Brush the aubergine slices with the seasoning mixture.
Roast the aubergine slices for 3-4 minutes on each side, until they are tender and slightly charred.
Remove the roasted aubergine slices from the grill and transfer them to a plate.
Sprinkle cheese on top and broil for a minute or two or until the cheese melts.
Drizzle tahini dressing on top or serve it on the side as a dip.
Serve hot.
Tips:
You can also add other Mediterranean seasonings like thyme, rosemary, or parsley to the seasoning mixture to add more flavor to the roasted aubergine.
If you don't have a grill, you can also use a grill pan or roast the aubergine slices in the oven.
Roasted aubergine can be served as a side dish or as a main course by adding some grilled chicken or fish on top.
